Forbes Living to Report on Sugar Substitutes in an Upcoming Segment
Forbes Living will examine a new contender in the race to replace sugar: mushrooms.

In products like chocolate, up to half the contents can be sugar, mostly used to counter the very bitter taste of cocoa. One company is currently experimenting with a new ingredient for reducing the bitterness in chocolate without exposing consumers to an overdose of sugar. The company is perfecting a process for fermenting mushrooms, the result of which is high on the sweetness scale and appropriate for adding to various food that needs a taste adjustment toward the sweet side. As well as taming the bitterness, the mushrooms add their own list of nutritious elements. The one hurdle that has been realized is that reducing the sugar content reduces the bulk of the chocolate altogether, meaning that the manufacturer would have to provide more product to maintain a similar portion size. The resulting cost could obliterate the savings on the sugar.
