With fresh crops of apples in, here is a quick and easy dessert. Delicious with a scoop of fresh whipped cream or vanilla ice cream.

Butter and Flour a 9 " Bundt cake
2 Cups of All-purpose flour , you can try whole-wheat pastry flour for a more wholesome version
    1teaspoon baking soda
    pinch of salt
    1teaspoon cinnamon
1cup 1/4 sugar, i prefer to use Turbinado sugar
1cup of oil, try a good olive oil for a special treat, I love the Holman Ranch Olive -- oil from Carmel Valley
    3 eggs
1/2 cup of sliced thin natural almonds
1cup 1/2 sliced thin Apples. Pippin are my favorites otherwise Fuji or Pink Lady

Sift flour ,baking soda and cinnamon together

Whisk together, eggs oil, sugar. Add to flour mixture. Fold in sliced Almonds and sliced Apples.

Pour into the 9" bundt cake pan

Bake in a regular oven at 325 to 350 for about one hour may be more. Test with tooth pick should come out clean.

It is really hard to tell exact baking time, each oven bakes differently and convection ovens cook faster. Let cool some and invert into a plate
