  • Abilene, TX (1888PressRelease) August 27, 2011 - Simply…Gluten-Free Inc., Founder and Gluten Free Recipe Developer, Carol Kicinski, was warmly received as she gave an inspiring and motivational talk, on August 17, 2011 to a large crowd at the event sponsored by the Dunedin Public Library in downtown Dunedin - her home town.

She spoke of embracing these changes, especially at a time when Celiac disease and gluten intolerance were not widely diagnosed and dietary food options were limited.

In the 18 years since Carol was first diagnosed as gluten intolerant, the awareness and education in this area has increased tremendously. Carol has been a big part of raising this awareness by developing nearly 1,000 gluten free recipes in an effort to make it easier and more enjoyable to experience the gluten free diet and life style. If you are new to gluten free, you can learn about it at her "What is Gluten?" page on her website.

The library organizer commented on the large number of books that were sold and signed by Carol - showing a strong interest from the public for delicious and simple gluten free dessert recipes.

All attendees were able to have a sample of some of Carol's gluten free Peanut Butter Cookies, made from one of her recipes out of her new Simply…Gluten-Free Desserts Cookbook.
