    She spoke of embracing these changes, especially at a time when Celiac disease and gluten intolerance were not widely diagnosed and dietary food options were limited.

    In the 18 years since Carol was first diagnosed as gluten intolerant, the awareness and education in this area has increased tremendously. Carol has been a big part of raising this awareness by developing nearly 1,000 gluten free recipes in an effort to make it easier and more enjoyable to experience the gluten free diet and life style.
