HYATTSVILLE - A bold new culinary concept is about to transform the frozen dessert scene in the DMV. Snow Crane, a minimalist Japanese ice cream shop founded by Michelin-trained chef Takeshi Nishikawa, is set to open its flagship location in the heart of the Hyattsville Arts District in late 2025.
But this isn’t just an ice cream shop it’s a movement. One that fuses world-class culinary technique, rare regional Japanese ingredients, and artistic storytelling into every scoop.
“I grew up in Mie Prefecture, surrounded by craftspeople and culinary traditions that rarely make it into the global spotlight,” says Chef Nishikawa. “Snow Crane is my way of honoring those roots while building something deeply personal, creative, and delicious here in the U.S.”
A New Standard for Dessert
Located inside Canvas Hyattsville, a new 250-unit mixed-use development, Snow Crane brings a fine-dining approach to one of America’s most beloved comfort foods. The seasonal, rotating menu features hand-crafted flavors that blend nostalgia with innovation:
Kinako Ice Cream with Okinawan Black Sugar Syrup
Satsuma Mandarin Sorbet
Japanese Strawberry Ice Cream with Sakurabacha Syrup
Hōjicha Tiramisu Sundae
Each offering is rooted in tradition, but elevated by Michelin-level technique and artistry.
“We’re creating something that’s never really existed before,” says Nishikawa. “It’s the Michelin scoop shop model small-batch, ingredient-forward, and culturally expressive.”
Local Roots, Global Reach
Snow Crane isn’t just about flavor—it’s about place. The shop will feature handcrafted interiors designed in collaboration with local artisans, showcasing:
Traditional Japanese lacquerware, woodwork, and paper art
Custom ceramic and print pieces by Hyattsville artists
Ingredients sourced directly from small producers in Uji, Okinawa, and Mie
By bridging cultures and crafts, the space becomes more than a shop—it becomes a cultural exchange, wrapped in the comfort of dessert.
What’s Next: Fundraising & Build-Out
The team has signed the lease, finalized architectural plans, and is now actively raising funds to support the build-out and equipment for the 1,305 sq ft location. Funding will also support:
Commercial-grade ice cream equipment & blast freezers
Handcrafted interiors and artistic installations
Sourcing of rare Japanese ingredients and teas
Hiring and training of the launch team
Marketing, community events, and pop-up activations
Snow Crane is expected to open its doors in late 2025.
Meet the Founder
Takeshi Nishikawa brings over 20 years of culinary experience to Snow Crane. His résumé includes Michelin-starred restaurants, national brand launches, and chef-driven innovation labs. A proud father and DMV resident, Nishikawa now turns his focus inward—with a project that reflects his heritage, creativity, and belief in the power of food to connect people.
