  • Salinas, CA (1888PressRelease) February 07, 2012 - Pacific's Edge at Hyatt Carmel Highlands,120 Highlands Drive, Carmel, Wine Director Paul Fried announced today the second dinner in its 2012 Winemaker Series that is taking place in Pacific's Edge legendary wine room.

    Second Winemakers Dinner of 2012:
    Save the date of March 15th beginning at 6:30 p.m.! Pacific's Edge will host its second Winemakers Dinner of 2012 -- An evening with the wines of Hall/Roessler. Kathryn Hall, owner of Hall wines of Rutherford and St. Helena, California to speak at the event. The evening will feature a five-course meal and the wines of Hall/Roessler. Roessler is known for its Pinot Noirs from outstanding vineyards in cool coastal regions, while Hall specializes in Bordeaux varietals. Roessler also produces Chardonnay.

    • Escolar Sashimi -- Santa Barbara uni, avocado, yuzu emulsion, micro wasabi

    • 2009 Roessler, Chardonnay Brosseau Vineyard, Chalone, Monterey County

There he was responsible for over half a million dollars in wine inventory, created an award-winning wine list, and spearheaded a training and an education program for all line and sommelier staff.
