For one night only, visiting chef Laura Giordano from Gelso Bianco will join resident chef Michael DeLone in the kitchen at Le Castagne to create a four-course dinner featuring the hearty and rustic cucina povera of the region. The distinctive Pugliese dishes, which showcase exceptionally fresh ingredients and un-fussy preparation, will be paired with with the dynamic and bold wines of the region, such as Primitivo, Negroamaro and Salice Salentino. In Puglia, the "heel" of the boot, locally sourced seasonal cooking has long been a way of life. The region's cuisine is based on homemade pastas and cheeses (like the delicious cream-stuffed mozzarella called burrata), as well as fresh vegetables, abundant seafood-Puglia boasts two coastlines, one along the Adriatic and the other on the Ionian sea-and, of course, copious amounts of Apulian olive oil.
