    Waterless cookware has been around since the 1930's. The first sets were made out of aluminum. During the 1930's only the most elite American households owned the heavy aluminum waterless cookware due to its very high price tag. This product proved to be popular and many found it worth the high price. People loved the way the cookware cooked and found that food tasted better using less moisture and heat during the cooking process. However, As more was discovered about the hazards of aluminum and its corrosive properties cookware companies sought to find a way to get the same great even heat distribution and fast heat conduction that the heavy weight aluminum cookware provided but with lower corrosive properties found in other types of metals. Stainless steel was the desired metal for corrosion resistance but not for fast even heat conduction. Stainless steel by itself is a very poor heat conductor.

    Over time cookware companies found that if they encapsulated other better heat conducting metals within the stainless steel they could combine the benefits of the noncorrosive stainless steel and fast even heat conduction of other metals such as aluminum and copper. Most of today's waterless cookware is made of aluminum and carbon steel encapsulated in T304 surgical stainless steel combining the advantages of these metals. T304 stainless steel has advantages including corrosion resistance, temperature resistance, flavor protection and ease in cleaning.
