At 12:00 p.m. at the Farmers Market join Chef/Owner Terry Teplitzky of Wild Thyme Deli and Caf้ for a cooking demo with a special recipe for diabetics. For 10 years, Wild Thyme Deli and Caf้ in Marina has united East Coast "comfort foods" with West Coast organic and fresh cuisines. Offering a delicious menu of sandwiches, salads and desserts; roasted meats and chickens, all items are made fresh on-site every day using only the finest ingredients.

Wild Thyme's Butternut Squash and Apple Bisque
    Serves 4-6
    • 1 large yellow onion, peeled and chopped
    • 2 rib of celery, chopped
    • 2 Tbsp butter
    • 2 Tbsp Olive Oil
    • 1 large butternut squash, peeled, seeds removed and cubed
    • 2 tart green apple, peeled, cored, chopped
    • 4 cups water or 3 cups of homemade or store bought, low sodium vegetable or chicken stock and
    • 1 cup water
    • ฝ tsp fresh thyme
    • 4 leaves fresh sage
    • Pinches of nutmeg, cinnamon, cayenne
    • salt and pepper to taste

1 Set a large saucepan over medium-high heat and melt the butter in the oil. Add the onion, celery and saut้ for 5 minutes, till the onion is opaque, taking care to turn the heat down if the vegetables begin to brown.
2 Add squash, apple, broth and/or water and herbs. Bring to boil. Cover, turn the heat down to a simmer and cook for 30 minutes or until squash softens. Puree. If the bisque is too thick you can always add a little stock or water or even heavy cream to thin, but bring the soup back to the boil after adding.
3 Add salt and spices to taste.
Notes: I sometimes feel there is a need for a little added sweetness, so I will sometimes add honey, agave or for a different taste, pure maple syrup.
4 Garnish with a dollop of unsweetened whipped cream or sour cream, chives or parsley.

Other additions to make this soup different:
    • Fried Sage Leaves
    • Cheese Straws
    • Cheddar and Chive Biscuits
    • Lemon Peel
    • Apple Cinnamon Chutney and Sour Cream
    • Apple Sauce and Bleu Cheese Crumbles
