  • Anchorage, AK (1888PressRelease) February 19, 2014 - Mr. Collier, who has studied at the Culinary Institute of America, is a nationally board certified ServSafe instructor and proctor through the National Restaurant Association. He first started in management at the age of 18 as a manager for Minyards food stores in Dallas, Texas. Five years later, he successfully transitioned into food and beverage management when he became an assistant restaurant manager for Embassy Suites Hotels in Irving, Texas. He has also served as a general manager for national chain restaurants including Steak & Ale, Olive Garden, and Tony Roma's.

    As the food and beverage manager for the Mount Roberts Tramway, Mr. Collier creates and maintains menus that attract cruise ship passengers, as well as residents of Juneau. He manages food costs, upholds menu standards, and controls inventory. He also creates event-specific menus for special occasions, including banquets, wedding receptions, and catered meetings. Mr. Collier is also responsible for day-to-day functions such as staff management, guest interactions, office administration duties, vendor communications, labor costs, overseeing the management of staff, ensuring that operational standards are met in regards to sanitation codes and laws, food storage, and loss prevention.
