L'Opera Introduces Vegetarian, Vegan & Gluten-Free Items

Owners Enzo DeMuro and Terry Antonelli said that while the culinary staff has long accommodated those with special dietary needs, the new menu will offer several items on a continuing basis that are denoted with "V" for vegetarian, "VE" for vegan and "GF" for gluten free.

    Among the new additions: Ai Legumi, sautéed kale topped with marinated quinoa (a protein derived from grain), cannellini, garbanzo and red kidney beans, red onion and cherry tomatoes; Carpaccio Ideale, paper-thin slices of Portobello mushroom topped with arugula, capers, red onion and hearts of palm; and Spiedini Marinati, a shish kabab skewered with tofu marinated in harissa and fresh herbs and grilled bell peppers and onions. Chef Walter Cotta says that the new items appeal to even those who have no dietary restrictions.

    "In addition to accommodating our vegan and gluten-free guests, we felt it was important that the new items must have universal appeal and judging by our guests' initial responses, we are achieving just that," said Cotta.

    Cotta said that several of the ingredients used on the new dishes like kale and quinoa offer a number of health benefits like lowering cholesterol, increasing one's energy and improving their digestive system.
