  • Salinas, CA (1888PressRelease) October 05, 2013 - Natividad Medical Center offers a Certified Farmers' Market every Wednesday from 11:00 a.m. - 3:30 p.m. The Farmers' Market is located at 1441 Constitution Blvd., outside of building 200-Out Patient Services and is part of Natividad Medical Center's ongoing commitment to promote wellness and healthy eating among Natividad Medical Center's staff, patients and their families.

    October Farmers Market:
    Join us on Wednesday, October 23rd at the Natividad Medical Center Farmers Market. At 12:00 p.m. at the Farmers Market join Chef Michael Kimmel from Tarpy's Roadhouse for a cooking demo with a special recipe.

    Tarpy's Fall Harvest Veggie Stir Fry

    Yield: 4 servings Try to use local farm fresh, organic produce whenever possible.
    · 2 c Butternut squash, peeled, deseeded.
    · 1/2 Red Onion, peeled, cut in 1/2 then julienne
    · 1/2 Red Potatoes, washed, cut into 3/4" pices
    · 1/2 c Carrots, peeled, cut in 1/2 then cut on a angle
    · 1 T Extra Virgin Olive Oil
    · 4 T Extra Virgin Olive Oil
    · 1 t Garlic , chopped
    · 1/2 c Fresh Vine Ripened Tomatoes, cut into 1" pices
    · 1/2 c Broccoli Florets
    · 1/4 c Zucchini, cut into quarters, slice on an angle
    · 1/4 c Yellow Squash, cut into quarters, slice on an angle
    · 1/2 c Cremini Mushrooms
    · 1/2 c White Sweet Corn, cut off the cob, no corn silk
    · 1/4 c Baby Spinach
    · 1 t Kosher Salt
    · 1/2 t Black Pepper, ground
    · 2 T Fresh Basil, chiffinade
    · 2 T Lemon Juice
    · 10 dashes Chipotle Tabasco Sauce Method

    - Toss 1st set of ingredients together and roast covered in a 400 degree oven for about 30 min or until potatoes are tender. Remove allow to cool.

    - Prep 2nd set of ingredients to prepare for stir fry. In a very hot large sauté pan or wok, add oil, then garlic, stir until garlic starts to brown. Toss in next ingredients in order adding one at a time. Continue cooking and stirring allowing vegetable to caramelize.

    - When vegetables are tender but still aldente (crisp) add last set of ingredients. Taste, adjust seasoning to your liking. Serve in a large deep bowl. Arrange broccoli florets around the top. Enjoy your healthy meal.
