Famous Chef and GranVida Resident Shares His Favorite Summer Salad Recipe

  • Ventura, CA (1888PressRelease) June 22, 2018 - GranVida Senior Living and Memory Care resident Julien Stuart has lived quite a life before settling down in Carpinteria. The New York native’s career credits includes being dancer with the American Ballet Theater, a fashion model for GQ Magazine and eventually becoming a chef after graduating from the Culinary Institute of America at Hyde Park.

    His first job as a chef was working for the executive dining room chef at Saks Fifth Avenue, preparing meals for the professional crowd who would frequently visit the dining room.

    “For the Saks job, I had to audition and make a dinner for 50 to 75 people. They then assessed it and I was hired,” said Stuart who also added, “From there, I met celebrities like Paloma Picasso, who was launching a fragrance line and Karl Lagerfeld, the German designer who took over Coco Chanel’s business when she retired.”

    After his position at Saks Fifth Avenue, Stuart became the personal and corporate chef for billionaires Neil Hirsch and Malcolm Forbes. He also had the opportunity to meet many celebrities including Sophia Loren, Elizabeth Taylor, New York Mayor Ed Koch and fashion designer Oscar de la Renta.

    “Malcolm Forbes would invite the heads of corporations to parties and sprinkle in celebrities so it would be glamorous,” said Stuart who also added, “They had two very large kitchens at their own building on Fifth Avenue and 10th Street, so they could serve a couple of hundred people.”

    To better perfect his culinary skills, Stuart traveled throughout Europe to study alongside many well-known chefs including the famous Italian chef Marcella Hazan who credits include her influential cookbooks that transformed Americans' notions of what real Italian cooking tastes like.

    Today, Stuart is settled in Carpinteria as a resident of GranVida Senior Living and Memory Care, where many of the residents enjoy his cooking classes he hosts on a regular basis, along with his stories about his life. He is excited about the opportunity to share his Salade Niçoise recipe:

    Salade Niçoise

    Ingredients
    Salad:
    • Tuna (fresh-grilled, cubed)
    • Hard boiled eggs (cut in quarters)
    • French green beans (haricots-verts)
    • Cherry or yellow tomatoes
    • Lettuce (mix escarole with fresh basil and butter lettuce)
    • Dried cranberries
    • Roasted nuts (almonds or hazelnuts)
    Vinaigrette Dressing: Oil, vinegar, salt, pepper, a little honey, juice of a fresh orange

    Directions
    Toss ingredients and place the tuna on top, then add the vinaigrette
