November 21, 2008 - Welsh Farm Organics have been running a poll on their shopping site (http://store.welshfarmorganics.co.uk) asking shoppers to pick their favourite meat.
The results have been surprising for some, with Organic Lamb/Mutton topping the poll at 38%, closely followed by Organic Beef at 29%, Organic Pork at 19% and organic poultry pulling just 14% of the votes.
Business owner Jonathan Rees commented:
“The average housewife understands just how much flavour well hung meat has to offer – I always hang mine for a minimum of 21days and the improvement in both flavour and texture is just amazing”
Most supermarket meat is not hung at all, or at best is hung for a very short period of time. Well hung meat is essentially stored for around 21days in a temperature controlled environment, and it allows the texture of the meat to change, imparting significant amounts of flavour to the meat.
Jonathan added:
“When we start with such a fantastic product, making sure that it is well hung meat just adds that final something to the finished dish and takes a great product into the realms of being a brilliant product”
