April 01, 2008 - Iain Macdonald and Gayle Hartley run their online specialist delicatessen from the small rural village of Orce in the Granada province of Andalucia. The village is home of “La Carniceria de Julian” or “Julian’s Butchers”. Iain and Gayle have teamed up with Julian and his wife who have been producing Spanish chorizo for generations. Iain speaks of the hand made chorizo’s “Julian and his wife have been supplying our delicatessen since day one, their chorizos are some of the best in the area. Due to customer demand from the UK for something “hotter” we collectively decided to devise a recipe for a very special and very hot chorizo”.
The humble chorizo is still hand made in Orce village, coming in two different types “dulce” (sweet) and “picante” (hot) with the addition of this third dubbed “chorizo del fuego” (fire chorizo) Orce Serrano Hams intend to fill the gap in the market for lovers of Phal curries and Mexican chillies with a very hot Spanish twist. Gayle explains “the recipe took a while to perfect as we needed the traditional flavour to remain as well as the age old methods. What we have created is an artisan product with a tremendous amount of bite, a real treat for our customers who like it hot”.
Iain and Gayle expect the first batch of chorizo cured in time for late Spring 2008 so if your taste buds require some “fire” this new chorizo may be the Spanish answer. You will have to be quick though, Orce Serrano Hams are already receiving orders for their second batch due early Summer.
