Zarena Allan and Ben Scott make all their products by hand and say that one of the most frustrating things is the distribution of their cakes, muffins and pies to shops. “With Gluten free muffins and pastry it really is the case of the fresher the better, as we use no artificial preservatives and keep the sugar content low, with wedding cakes they benefit from a little maturing.

We do sell to health food shops and cake shops all over the UK but much of our sales are mail order online which is a lot easier to distribute. We just bake the cakes and then send them straight out on an overnight delivery.” Ben explains.

Although Zedz foods built a cult following with their delicious wheat free, gluten free, egg free, dairy free muffins the vegan, wheat & gluten free wedding cake side of their business has really taken off.

“Most people buy our gluten free vegan wedding cakes and birthday cakes for their celebrations, not necessarily because they are coeliac or on wheat free, gluten free, dairy free or other special diets, but a) because our special cake recipe fruit cakes are delicious and b) because it takes the headache out of catering for large numbers of people with different dietary needs.” says Zarena.

Coeliac disease affects an estimated one in 300 people in the UK, and tends to be diagnosed in adulthood rather than childhood. Some experts suggest it could be more than one in a hundred that are intolerant to wheat.

Research from St Thomas' Hospital in London found many patients suffering the classic symptoms of fatigue, diarrhoea and wasting are told by GPs they are either suffering from anaemia or irritable bowel syndrome - when one in 10 of them has coeliac disease.
