May 23, 2009 - Hilton Waterfront Beach Resort in Huntington Beach, California, aka Surf City USA ™, has planned a fun and festive Father’s Day event fit for a king, including an elaborate poolside BBQ brunch with live Calypso music at the resort’s popular Shades Restaurant and patio overlooking the Pacific Ocean on Sunday, June 21, 2009.
Executive Chef Jeff Littlefield has planned a feast that will begin with artisan cheeses and assorted olives and breads; Tuscan bread salad, summer tomatoes, red onions with a whole grain mustard dressing; fried chicken Caesar salad; sesame cabbage slaw with roasted peanuts; and charred corn and black bean salad with roasted bell peppers.
For the BBQ lovers, the grills will be overflowing with charbroiled Angus beef burgers; pork chops with apple chutney; spicy grilled Italian sausage; BBQ chicken with chipotle BBQ sauce; baby back ribs; corn on the cob; jumbo grilled asparagus; and buttermilk whipped potatoes.
Appropriate for the resort’s coastal setting, brunch will also include an array of seafood including jumbo shrimp cocktail; a Waterfront sushi selection; Ceviche salad with scallops, rock shrimp and calamari; and the famous Shades clam chowder. Guests will also enjoy a choice of traditional breakfast items including omelets cooked to order; Belgian waffles with strawberries and whipped cream; eggs Benedict; bacon; and sausage.
To top things off, a broad selection of mouth-watering desserts will be offered, including lemon tart with raspberries; a dense chocolate mousse cake; carrot cake with cream cheese frosting; strawberry shortcake; chocolate éclairs; cheesecakes with berry sauces; delicious tiramisu with amaretto; banana tart; black forest cakes; and tuxedo strawberries.
Hilton Waterfront Beach Resort’s Father’s Day BBQ will be offered from 11am to 3pm. The cost is $49.95 for adults and $19.95 for children ages 6-12, plus tax and gratuity. Children five and under will be complimentary. Live music performed by a Calypso band will entertain during the entire event.
