June 10, 2009 - Warrenville, IL - Cook’s is introducing their new line of Rite Size © Square Servers. These innovative portion control tools are specifically designed for the correctional kitchen. Featuring exact capacities and a unique square bowl, these new servers will help correctional kitchens reduce food costs and improve sanitation in their tray make up process.
The new Rite Size© Square Servers have been created to address a situation common in the correctional kitchen. Most jails and prisons serve meals on insulated trays or trays with smaller, deeper compartments and use a traditional round server like the Spoodle® from Vollrath or the Measure Miser® from Carlisle in tray makeup.
In using these round servers to place food into the small square or rectangular compartments of the trays, much of the food ends up outside the actual food compartment. When this happens trustees or staff often add more food to the tray to make up for the portion that was lost, forcing food costs up by using more food than necessary. And with the food that didn’t make it into the compartment now on the top of the tray, the trays become unsanitary, particularly in the stacking process.
The unique square bowl of the Cook’s Rite Size© Square Server creates a compact scoop of food which easily and neatly fits in small tray compartments. Because the entire scoop of food goes into the compartment there’s no need for an additional scoop or partial scoop, so portion control has been retained.
As food costs and other kitchen expenses increase, portion control continues to be an important component to containing costs. To understand the importance of portion control and what the Cook’s Rite Size© Square Servers can do for the correctional kitchen, you simply need to do the math. For a jail or prison kitchen that is serving 300 inmates, if the foodservice manager is able to reduce the cost of each meal by just 1 penny, they would be able to reduce their expenses by $3,285 in one year. By serving correct sized portions and using the Cook’s Rite-Size© Square Server so that only a single scoop is needed to attain the appropriate serving, the Foodservice Manager can see a direct impact to the budget.
The Cook’s Rite-Size© Square Servers are available in four sizes, 4, 6, 8 and 10 ounce sizes, and with a solid or perforated bowl. Each server is color coded and the capacity is clearly visible on the server handle. These servers are made from a highly durable, stain resistant, co-polymer plastic and they are dishwasher safe. They meet NSF standards have a one-year warranty.
Correctional professionals interested in testing the Rite Size © Square Servers in their operation should call Cook’s at 1-800-956-5571 to request a sample server.
