  • St. Cloud, MN (1888PressRelease) May 12, 2011 - James H. Mace, Executive Chef for Covenant Pines Bible Camp, has been selected as an Honored Member of the Biltmore Who's Who Executive and Professional Registry. The selection recognizes James H. Mace's commitment to excellence in Hospitality.

    Mace, who holds a Bachelor's Degree in Accounting and Finance from Ryerson University, and is a culinary graduate of Niagara College and certified executive chef, has been working in the hospitality industry since 1967.

    In his current role, Mace does all of the hiring and firing of his kitchen staff and conducts all of the necessary training required to run his kitchen. He bakes from scratch and prepares most of the food lines by himself. He sets up vendors and negotiates food, equipment and janitorial supplies for the camp and makes sure all inventories are in control. He does the menu planning for all of the retreat season groups and also for the summer camps, and works very closely with the retreat quest coordinator and program retreat staff to ensure that all supplies are on hand. In addition, Mace makes sure that all of the hospitality equipment is in good operating condition and notifies the proper departments when problems arise.

    Having owned and/or operated a combined total of twenty-two restaurants and eight coffee shops throughout the course of his career, Mace said, "My first love and my greatest passion has always been to become a chef."

    Crediting his finance and accounting degree to how he manages the operations end of the business, Mace continues to keep up with his education by means of online courses and by reading a variety of different publications in his field. In the future, he hopes to do more professional consulting in the hospitality arena, conduct educational seminars and personal growth seminars.

    Mace is a former member of the American Culinary Federation. He is the winner of numerous culinary competitions over the years and came in at number two hundred fifty out of more than eight thousand applicants in a Cajun competition a few years back. He also won a cook-off competition at the Maines Food Show in upper New York State approximately ten years ago. James is a strong supporter of World Vision, and enjoys playing golf, watching LA Lakers Basketball and Duke University Sports in his free time.
